As part of our 25th birthday celebrations, Tom Kerridge has been teaching us how to cook in a ten-part series. To round it up, Tom has shared his favourite choices for a three-course meal.
Tom has shared his ultimate menu with us – and we’ve matched his ideas with BBC Good Food recipes that are more of a challenge.

Tom Kerridge’s ultimate menu
First course
“I always go for something fried, crispy or crunchy to start.”

Try making…
Battered Amritsari fish
Squid pakoras with coconut yogurt dip
Pea, feta & quinoa spring rolls with roast tomato nam prik
Crispy squid with capers
Cauliflower tempura
Main course
“Go for something slow cooked – preferably something that takes over a day to prepare and cook.”

Try making…
Tom’s butter-based pork loin
Tom’s fish stew with roast garlic & saffron
Twice cooked pork belly with onion & apple veloute
Ballotine of pheasant
Proper beef, ale & mushroom pie
Dessert
“Don’t go for anything that’s too sweet. People sometimes add too much sugar – you want to be able to taste the key component of the pudding, be that milk, chocolate, fruit or another main ingredient.”

Try making…
White chocolate & cardamom tart with raspberry dust
Raspberry millefeuilles
Blackberry & apple frozen yogurt cake
Razzle dazzle lemon roulade
Strawberry gâteau St Honoré
