Test Kitchen tips for the perfect honey-glazed carrots:
- Try to cut the carrots to roughly the same size before roasting. This helps them cook evenly, so they're tender all the way through while still developing those lovely caramelised edges.
- It's important to add the honey at the right stage rather than too early, as its natural sugars can catch in a hot oven. Tossing the carrots thoroughly in the glaze also helps give them an even, glossy coating. If you cooking for someone who doesn't eat honey, simply swap it for maple syrup. It caramelises beautifully and gives the carrots a slightly deeper flavour.
- For a savoury contrast to the sweetness, we sometimes add thyme, rosemary or a pinch of cumin. A little finely grated orange zest works beautifully too and gives the carrots a fresh, citrusy lift.
- These glazed carrots are a natural partner for roast chicken, beef or lamb, but we also love them alongside a nut roast. Just before serving, you could scatter over some chopped parsley or toasted nuts for extra colour and texture.
