Method
-
step 1
Mix the breadcrumbs and milk together in a large bowl using your hands. Add the beef, half the onion, the egg yolk, 2 tsp salt, some freshly ground black pepper, the mustard powder and onion and garlic granules. Keep mixing well until all the ingredients are thoroughly combined, then form into four steaks about 2.5cm thick. Set aside.
-
step 2
Melt half the butter in a large frying pan over a medium-high heat and brown the meat steaks for 1-2 mins on each side. Remove from the pan. Melt the remaining butter in the same pan over a medium heat and cook the remaining onion with 1 tsp salt and some black pepper for 5 mins, scraping up any browned bits from the bottom of the pan.
-
step 3
Add the mushrooms and brown them quickly, then add the flour and stir over a medium heat for 2 mins. Add the tomato purée or ketchup, and stir for a few minutes more. Slowly pour in the chicken stock, stirring continuously until a thick sauce forms. Drizzle in the Worcestershire sauce, soy sauce and vinegar. Put the steaks in the gravy and cook for 5 mins over a medium heat to warm through.
-
step 4
Sprinkle over the parsley and serve with mashed potatoes or rice and a green vegetable.
