RECIPE TIPS
IF YOU CAN'T FIND BAMBOO LEAVES

You can use strips of baking parchment (50 x 30cm, folded in half lengthways) for wrapping if you can’t find bamboo leaves. Bamboo leaves, crispy fried shallots and dried shrimp are available on amazon.co.uk. You can buy salted duck egg yolks at Chinese grocery shops, or make them yourself here.
